Maple Syrup
Maple syrup is made by tapping the Maple tree. Tapping is the process of drilling a 5/16" hole into the tree, inserting a spile that is attached to tubing. With the warm days and cold nights, the trees come out of dormancy. As they do, the sap starts to run, it flows through the tubing down the mountain to a gathering tank.

Maple Sugar
Maple Sugar is made from our Maple syrup. Nothing is added. All we do is boil it down further. When the temperature hits 265 - 270 degrees, we immediately stir. As it cools it transforms from a liquid to a crystalline form. Maple sugar is unique, all natural simple sugar. It can be a 1-1 substitute for other sugars, adding a hint of Maple to your favorite recipes.

Maple Cream
Maple Cream is also made from pure Maple syrup with nothing added. Maple syrup is boiled to 232-234 degrees, cooled to room temperature and then stirred to a very fine, creamy, crystalline consistency. Excellent on toast, bagels, French toast or to use as a topping on homemade Cinnamon buns.
